An Insight into the difference between gelato and ice cream

Both gelato and ice cream are popularly loved frozen desserts. However, although both seem similar, they differ from each other in more than one way. Here’s an insight into the differences.

Come summer and it is common to find ice cream parlors crowded with people reveling in the joy of digging into flavorful frozen desserts. It could be gelato or ice cream. At a glance, both delights seem to be the same. However, they are different from each other. Gelato, the Italian frozen dessert is different from its industrialized American counterpart; ice cream. Although both are made from milk, sugar and air and inject almost equivalent calories and sugar content in the body, they are different in more than one way.

Delving into the Differences

Here’s how….

  • Although both the desserts are made from ingredients including milk, air and sugar, the distinction in the procedure is what imparts the taste. Typically, ice cream is made by blending milk and sugar in specific proportions under specified conditions. Then, flavors are added to create the much loved desserts varying from strawberry, chocolate and black currant to many others. The ice cream is then overrun. Overrun is the measure of the amount of air added during the production of ice cream. Ice cream is churned fast, which folds in a large amount of air. This is what contributes to the increasing volume and fluffiness of ice cream. Gelato is blended slowly and therefore, contains less air; about 10%, while ice cream has 50%. So, although the conventional industrialized ice cream is fluffy, Gelato is smoother, tastier and more flavorful.
  • The fat content in gelato when compared to ice cream is significantly lower. American ice creams have 10% of fat content, while its Italian counterpart has only 3.8%. For; unlike ice cream, gelato is prepared from pure milk and not powdered milk or cream. This is what makes American ice creams creamier. However, the butterfat settles on the tongue and the taste buds take a longer time to detect the true flavor of ice cream. On the other hand, gelato is silkier and denser. Its dense nature allows it to pack more flavors than ice cream. This is why ice creams are unable to mimic the true flavors as well as gelato.
  • The Italian gelato is softer. It melts in the mouth while imparting the wonderful taste of true frozen dessert. What makes it so is the temperature at which it is served. While American ice creams are usually served at a temperature of about -20 degrees, gelato is served at a temperature of -14 degrees. Now you know why the difference in the tastes of the two desserts is starkly different.
  • The Italian hand-made gelato is made in small batches and sold almost immediately. It therefore, does not require the preservatives like ice creams do. Gelato is undoubtedly, the healthier and better alternative to the traditional ice cream.
